Sweet soup 糖水

Peanut sweet soup

花生糊

Neutral平

Gentle and balanced. Traditionally fine for most people, any time of year. Peanuts are neutral; a spoonful of rice adds only a touch of warmth.

Good for traditionally believed to moisten dryness and settle the stomach.

Where to buy

Method

  1. Toast the peanuts in a dry pan over medium-low heat for about 7 minutes, until golden and fragrant. Cool, then rub off the red skins. Soak the rice while they cool.
  2. Blend the peanuts and drained rice with 350 ml of the water in short bursts until it is a smooth, thick purée.
  3. Bring the rest of the water to a boil and melt the sugar in it.
  4. Pour in the peanut purée and stir over low heat for about 5 minutes, until creamy. Loosen with hot water if it gets too thick.

Who should go easy

Not for anyone with a peanut allergy. Rich, so go easy with loose stools.
